To prepare the Tarragon-tomato juice recipe, please follow these instructions:
Place the skinned and chopped tomatoes in a thick-bottomed saucepan and cook on a low heat for about 5 minutes, or until the tomatoes start to give off juice.
Purér the tomatoes in a food processor. Add salt, pepper and vinegar and store in the refrigerator until serving. Stir in finely chopped tarragon in just before serving.
