Instructions for Stegtesild

To prepare the Stegtesild recipe, please follow these instructions:

Clean herrings, take out the anchovies, but let filéterne hang together in the back.

Sprinkle the belly with salt and chopped parsley or dill. Cut a slanted incision in the skin on each side and turn the herring in wheat flour.

Golden fry them in oil. Serve with bread or grain dishes and a salad with lemon dressing.

Variation: mix a little grated horseradish or ginger in the flour before the herrings reversed in it. Increased if necessary. a little onion with herrings.
