Cod roe from the shackles of EVS. membranes, cut into slices and place in a serving dish. Advantage finely chopped shallots, capers and olives. Stir a dressing of vinegar, mustard and oil. Taste for salt and pepper and, if desired, md garlic. Advantage dressing over ROE and let it draw 30 minutes. Serve on lettuce and Roe give baguettes or toasted bread. As lined or their own pickle.
