Ingredients for Raspberry Sorbet

1Egg white, pasteurized
1pinchSalt
1.5dlSugar
2.5dlDanish water
500gRaspberries, fresh

Instructions for Raspberry Sorbet

To prepare the Raspberry Sorbet recipe, please follow these instructions:

Clean the fruits well in lukewarm water. Mix them together.

Pour sugar and Danish water into a pan and heat to the sugar just melted. Then cool in a cold water bath.

Add the fruit mix and mix well. Put it in the freezer for 1 hour.

Whip the egg whites with the salt to solid foam and gently turn it into the half-frozen pulp. Put it back in the freezer for about 2 hours.

Take out the bowl and whisk the ice well a couple of times along the way, so the ice crystals do not get too big.

Deep possibly. Serving glasses in a little water or lemon juice and then in sugar to form a frosted edge.

Slice the sorbet into four serving glasses. Server immediately.
