Ingredients for Parsley-Pesto

A few small sardeller (salted anchovies) If you can find them
Good olive oil
1potBasil
1Small teaspoon salt
1Large bunch flat-leaf parsley
1-2cloveGarlic
200gMixed peeled almonds/pine nuts
50gPecorino/parmesan cheese

Instructions for Parsley-Pesto

To prepare the Parsley-Pesto recipe, please follow these instructions:

Almonds, pine nuts, cheese, salt and garlic is chopped in a food processor (it must be really fine takes place the whole thing in a stone mortar) Parsley (without the aller coarsest stems) and basilikun are crushed with (pause, possibly the machine and help in getting it all down to the blades) Oil added (2-3 dl is not too much) to Pestoen, for the consistency is creamy but not fluent.
