Instructions for Lakkidsbolsjer ØKO
To prepare the Lakkidsbolsjer ØKO recipe, please follow these instructions:
Fold the towel and place it on the tabletop. Lay the baking sheet on the towel. Grease the teflon tissue with a little oil on both sides and place it on the baking sheet. Grease plastic scrapers and scissors with a little oil.
Bring water, sugar and grape sugar to the pan and put it in full heat with lid.
When all the sugar is melted, remove the lid and place the thermometer in the pan.
Boil to exactly 162 oC and pour the mass onto the teflon tissue.
Wait a ½ min. Sprinkle liquorice powder over the mass. Fold the mass inward of the powder so that the liquorice powder is melted and distributed.
When the mass is a bit firmer add the anis oil. Soon until the mass is so cool that it can be kneaded with your hands.
Gather the mass into a lump and pull out short strips as they are cut into bolts or shaped into lollipops. Do not let the bolsters touch each other.
The bolts are packed airtight when they are easily cooled.
