To prepare the Gâteau Genoise (Sugarcake Cake) recipe, please follow these instructions:
Whip the whole egg very thoroughly with sugar. Sift flour and baking soda together, so the flour is very airy. Turn it into the eggs with a little hold and without touching more necessary. Fill the dough in a round bake form, buttered 2 times with butter and sprinkle with a thin layer of flour. Pour the cake as indicated and try with a stick as it is peeled. Sugarcakes are quite neutral in taste and are therefore suitable for the addition of flavor ingredients like lemon, orange, vanilla, chocolate, cream, liqueur or anything else. The dough can also be added 75 g of melted, chilled butter to make a little juicy.
A real sugarcake dough is otherwise completely free of fat.
