To prepare the Cucumber Sorbet recipe, please follow these instructions:
The cucumber is cut into smaller pieces and purified in the blender with white wine. The mass is poured into the ice machine. Let ice freeze until it gets a mashed consistency about 30 min. Without ice machine: pour the mass into a mold and place in the freezer for 1 1/2 hour. Occasionally, the ice must be stirred. Scrape the pages of the mold every time, avoiding flakes in the sorbet. Let the ice freeze until it gets a mushy consistency. Whip the white stiff and the sugar is whipped in. Turn this lot into the greased ice. Let ice freeze for another 30 minutes in the ice machine, without ice-cream for 11/2 hours.
