Ingredients for Croque Madame

100 | g | Grated Emmenthal |
2 | Egg yolks | |
2 | tbsp | Wheat flour |
2.5 | dl | Milk |
4 | Eggs | |
4 | slices | Good cooked ham |
50 | g | Butter |
8 | slices | Sandwich bread |
Instructions for Croque Madame
To prepare the Croque Madame recipe, please follow these instructions:
Melt the butter in a thickened pot, add the flour. Now add grated nutmeg and milk gradually. Let it boil for whipping for approx. 5 min and taste it with salt and pepper as well as the grated emmentals and egg yolks.
Shake the bread on a dry pan until golden and crispy.
Grease the bread with dijon mustard and put the cooked ham on four loaves of bread. Then lay it down. Sliced tomato and then bread on top. Now pour the cheese sauce on top.
Bring the sandwiches to the oven at 225 degrees C. Alm. Oven for approx. 15 min. You can possibly. Grille them to have a brown color, but they will not be crisp, but if you wish, you can get a little grated cheese on top.
Just before serving a mirror egg.
