To prepare the Clear soup with egg-Zuppa pavese recipe, please follow these instructions:
Cut carrots and celery into very small cubes. Cook them in the broth for 10 minutes. Fry the bread slices in the butter in a frying pan. Put them in four good warm soup plates and beat an egg out on each bread slice. Gently pour the boiling soup over. Sprinkle with grated cheese and chopped parsley.
