Ingredients for Citrusis
Both orange and lemon balm | ||
0.5 | tsp | Finely grated orange peel |
1 | dl | Freshly squeezed orange juice |
1 | dl | Freshly squeezed lemon juice |
2 | Egg whites | |
2 | dl | Whole milk |
225 | g | Sugar |
3 | tbsp | Water |
Instructions for Citrusis
To prepare the Citrusis recipe, please follow these instructions:
Boil sugar and water in a saucepan at even heat, approx. 4 min. A drop of the mixture poured into a cup of cold water should be able to form into a ball. Whip egg whites almost stiff. Whip the boiling sugar in the egg whites and keep whipping whites stiff and slightly chilled. Mix orange peel, lemon and orange juice in egg whites.
Mix the milk in the egg whites and pour the mixture into a mold (about 1 liter). Place the mold covered in the freezer approx. 5 hours. Stir in the ice 3-4 times during freeze.
When serving:
Put the ice on a dish.
tips:
If a more acidic ice is desired, orange peel and juice can be replaced with 1 dl lemon juice. If a lighter ice is desired, lemon juice can be omitted and replaced with 1 dl orange juice.
