Ingredients for Chicken a la nicoise

12 | Black olives | |
2 | clove | Garlic |
4 | Ripe tomatoes | |
5 | tbsp | Olive oil |
Instructions for Chicken a la nicoise
To prepare the Chicken a la nicoise recipe, please follow these instructions:
Slice the chicken along, rinse and dry the pieces well and season with salt and pepper.
Heat the oil in a thickened pot and brown chicken pieces on all sides above excessive heat. Pour some water into the pan, lay on the lid and cook the chicken pieces for approx. 45 minutes. When the thighs loosen easily, the meat is passed. Take the chicken pieces up and keep them warm.
Rinse and peel the tomatoes. Clean them for cores and chop the meat roughly. Remove any stone from the olives. Pill the garlic cloves and crush them.
Cook the pot with white wine and add tomatoes and garlic and boil over even heat for 5 minutes without lid. Season with salt and pepper and add the olives.
Put the chicken pieces back into the pan and sprinkle with basil. Server immediately.
tips:
Server fried courgettes, pasta or rice to. The fresh tomatoes can be replaced by the same amount from canned. They just need to be driped before they are chopped. Add some capers or a pair of chopped anchovies to the sauce.
