14-16Small hard sour apples
200gLight syrup
200gButter
5dlCoffee cream
500gBrown sugar

Instructions for Caramel apples with homemade caramel

To prepare the Caramel apples with homemade caramel recipe, please follow these instructions:

Wash and dry the apples. Remove stems. Insert a wooden stick into the hole where the stem was sitting. Set the apples on a piece of buttered wax paper.

Melt the butter in a thick-bottomed saucepan on a low heat. Add the brown sugar, cream and syrup. Mix it well. Stir into the Pan under medium heat until caramel mass boils.

Insert roast thermometer down into the Pan and turn the heat down a little. Let mixture continue to simmer, until the thermometer shows 122 (it will take about 45-60 minutes at medium heat) the thermometer may not reach the Pan bottom. If you don't have a thermometer, you can leave a drop of caramel mass run out on a plate. Karamellen should be firm enough to hold their shape for a moment but then run out slightly.

Remove the Pan from the heat and quickly dip each Apple into the caramel mass, and turn around so it will be well covered. Dip in the chopped nuts, chocolate shavings or sprinkles. Put the apples in the refrigerator. They can stay here for up to 2 days.
