Wash the potatoes and put them in a 200 degree hot oven until they are tender 1 - 1½ hours. Cool the potatoes a little bit. Cut the potatoes all along and gently scrape the potato with a spoon. The shells should remain the whole. Whip the hot potato pulp with a butter and egg yolk, parsley and chives. Whip the white stiff and turn it into the mashed potatoes. Season with mushrooms, salt and pepper. Distribute the mash into the hollowed shells and put them in the oven for 15 - 20 min. At 180 degrees until the surface is golden.
