Ingredients for Appetizer with eggplant (Microwave)

Cucumber into thin sticks
Freshly ground pepper
Toasted rye bread
½lGroftrevet lettuce (50 g)
1Scallions into thin strips (25 g)
1cannedConcentrated tomato paste (70 g)
1cupSalad yogurt (250 ml)
tspCoarse salt
12Black olives
2tbspFinely grated red onion
4dlAir-dried iceberg lettuce (75 g)
650gEggplant

Instructions for Appetizer with eggplant (Microwave)

To prepare the Appetizer with eggplant (Microwave) recipe, please follow these instructions:

Baking time: Approx. 55 min. At 200 °

Microwave oven: Approx. 10 min. At full power.

Slice the eggplant along and dot the meat sides with a fork. Place them with the meat side down, on a plate of baking paper. Bake the eggplant in the middle of the oven. Peel off and chop the eggplant meat very nicely. Stir with red onion and tomato paste. Turn the salad yoghurt in and taste with salt and pepper. Put the aubegine puree in the fridge for at least ½ hour.

When serving:
Season vegetables and olives on serving plates together with some of the aubergine purée. Serve the rest in a bowl next door.

tips:
The eggplant purée can also serve fried fat dishes
