1tspDijon mustard
1tspSalt
2Egg yolk, pasteurised
2cloveGarlic
3dlOlive oil

Instructions for Aioli (mayonnaise cream)

To prepare the Aioli (mayonnaise cream) recipe, please follow these instructions:

Crush garlic with salt in a mortar. Put egg yolk and mustard in a bowl and whip it.

Add the olive oil drop to drop. Once you have added a quarter of the oil, you can add it in larger quantities at a time.

When all the oil is added add garlic and lemon juice and possibly. Extra aromas.

Finally add salt, freshly squeezed pepper and lemon juice.

tips:
The whistle can be finely chopped if you do not have a mortar.
