600gFresh salmon without bones and skins

Instructions for Advocadosuppe

To prepare the Advocadosuppe recipe, please follow these instructions:

Slice the salmon flesh into fine strips. Mix lime juice, crushed garlic, sugar, salt and pepper and pour over the salmon flesh. Let it soak in a cool 4 hours.

Share avocados and remove the meat with a spoon. Sprinkle the meat with lemon juice. Warm broth up. Puréer avocado flesh in the Blender together with white wine and stick it in the broth. Warm the soup up to just below the boiling point during the whipping and season to taste with salt and cayenne pepper.

Pour the soup in warm bowls. Came the salmon strips and lumpfish ROE in each portion and serve immediately.
