To prepare the Salt baked sea trout recipe, please follow these instructions:
Chop the olives with stones in a blender. Pour the mass in a large bowl and mix the salt in. Add the beaten egg whites and mix everything thoroughly.
Preheat oven to 250 degrees. Fill the cleaned fish with Rosemary and lemon slices. Place it on a baking sheet on a 2-3 cm thick bed of salt and olives. Advantage the rest of the olive/salt mass around the fish in a single layer. Keep possibly the mass in place using "sausages" of tinfoil. Behind the fish in 20-25 minutes. Let it rest for 10 minutes before the salt crust carefully removed. Cut the skin on the cross by the fish's head and pull it off. Cut down in the middle of the fish and remove the flesh into flakes. The fish must be juicy and pink inside.
