To prepare the Roquefort medals from Aalholm Castle recipe, please follow these instructions:
Chop the cheese a bit into pieces with a fork. Add the butter and stir/mush it together with the cheese, so there's a nice little cheese mixture.
Take the rye bread slices and push decorative round medal-sliced off with a glass. Take a smørrekniv and put about 3 large BLOBs curd on broke the dial, so that it forms a little "mountain". Garnish with Cress and small radisseskiver and serve the medals on a nice serving dish.
Server medals with a good glass of port wine.
Tips:
The butter may be omitted, but since it is not everyone who likes a really strong cheese, it is recommended to get it in.
-You can also try to replace bread with pumpernikkel, but most can now not so good like it. They also will have coarse rye bread.
