Råcreme: beat the egg yolks and powdered sugar thick and foamy. Scrape the grains of the split vanilla pod and add to the. Whip the cream stiff and turn it into egg mixture just before serving.

A less "bold" råcreme can be made of 4 egg yolks and half curdled milk and half whipping cream. The recipe is otherwise unchanged.
