Instructions for Marinated wild boar trail
To prepare the Marinated wild boar trail recipe, please follow these instructions:
Start with marinade: Sauté carrot, onions and celery in half of the oil until they are soft but not brown. Add wine, vinegar, bouquet garni, juniper and peppercorns and bring to a boil. Let it simmer until the vegetables are tender, 15-20 minutes. Add the rest of the oil and let the marinade completely chill (otherwise the meat will be acidic in taste).
Marinate the meat for 1-2 days in the fridge.
Place the meat in an ovenproof dish or a small pan. The marinade is poured and the meat is placed in the oven at 160 °. Stairs approx. 1½ hour - or to the stepperometer shows 72 °. The meat is taken out of the oven and rested for 10-15 minutes. The meat is finished when the meat temperature reaches 75 °.
