For the frozen gazapcho all ingredients except glucose are mixed in a blender and purified. Glucose is melted over low heat and stirred in. The mixture is placed in the freezer for about 4 hours.
The salmon is spread over 4 plates and drip with lemon or lime juice for half an hour before serving and refrigerated. The Gaza shoe is taken out of the freezer 20 minutes before serving. The salmon is served with the gazpacho balls on the plates. The dish can also be garnished with a little tomato, pepper and cucumber in tern, marinated with garlic, oil and lemon juice
