To prepare the Lime parfait with Compote of sensommerbær recipe, please follow these instructions:
Compote: Boil sugar and water with the grains from the broken and scraped vanilla pod. Add the fruit and warm it all up for a brief moment, so few of the berries will skip their film. Kompotten cool.
Parfait: whip the cream stiff-but not too stiff, because the cream can separate when limejuice added. Beat the egg yolks, sugar, lime zest, lime juice and vanillekorn to the creamy texture. Gently turn the cream into the egg mixture. The ice will freeze in a springform.
Snack: come kompotten on a plate. Cut the ice into triangles and serve them on top of the kompotten. Garnish with mint leaves and finally sprinkle with icing sugar.
