Ingredients for Knish-Knishes

0.25tspPepper
0.25cupButter
0.5cupCold water
0.5cupOnion (finely chopped)
0.5tspSalt
1tspBaking soda
1cupBoiled potatoes peeled and mashed
1.5cupMashed potatoes
3cupWheat flour

Instructions for Knish-Knishes

To prepare the Knish-Knishes recipe, please follow these instructions:

Mix mashed potatoes, oil and salt. Add flour mixed with baking soda-sammenrør well. Make a hole in the center of the flour/dough and add the cold water. Knead the mass together to form a soft dough. Let the dough rest on a floured/plate and cover the dough with a tea towel in a bowl or 1/2 hour.

Cut the dough into 4 portions. Deploy the dough as thinly as possible. Knockout dough into squares of about 5 x 5 cm. for regular "kishes" or less if they are for snacks. Place the stuffing in the middle of the square cut-out dough and fold the shortest corners against the Center first. Then fold the long end up against each other. Bake on an oiled plate or piece of wax paper, well oiled with the folded sides down, until the dough is golden, approximately 1/2 hours at 175 degrees.

Potato filling: Saute the onions in the butter, mix all the ingredients together and stir the mass well through.

Tips:
BUCKWHEAT FILLING: mix 1 1/2 cup of kasha, or toasted oatmeal with 3 cups of boiling water and 1 tsp. salt. Boil on a low heat until the water is absorbed, 15-20 min. Rose 2 chopped onions (medium size) in the 1/2 cup of oil.
