Instructions for Guacomole I
To prepare the Guacomole I recipe, please follow these instructions:
The avocados are broken and the stones are removed - but do not throw them all out, save one or two. The meat of the avocados is scrapped in a bowl and mashed with a fork until there are no larger lumps. Onions, tomatoes and chili are cut into small pieces and crushed in a stone mortar. Of course it's easier to blend it all, but the taste does not get the same when you break as you blend.
The avocado, onions, tomatoes, chili and chopped coriander mashed together. Add some lemon juice and season with salt. Finally, one or two of the avocado stones came in. The scam is that they prevent the guacemole from getting brown if it's going to be a while.
A guacamole should not be tremendously strong, but you should be able to taste and feel the little green serrano chili whose characteristic fresh taste is an important part of the Mexican cuisine taste. The bearing in a guacamole is the mild avocado.
