The fish is scraped, cleaned and rinsed and then dried in a cloth or paper towel to remove the superfluous water. Give the fish a cut down along the center line and steady a little on the fillets on the thickest place. Rub the spices into this section. Butter fish well with oil.
Grill the fish by strong heat for a start to "close" the fish, later it can be moved further up. calculate 3-4 minutes on each side, easily a little on the fillet in the cut to see if the fish is done.
Serve with green salad sauce or herb butter and flutes.
Tips:
All flat fish can be grilled by this method.
