Instructions for Gourgemole

To prepare the Gourgemole recipe, please follow these instructions:

Avocados are peeled, the stone is removed and the meat is cut into the tern.

Ripe avocados, salt and lemon juice blend into a porous mass. Garlic (preferably from fresh garlic) and chilli finely chopped in a food processor - add the chopped garlic and chili and chop the mixture further. Garlic, onions and chilli mix well with the avocado cream. Add if necessary. A little cold water if the texture is too fast - this happens often if the avocados are not so mature.

Set cold for a couple of hours and then ready for serving.
