Instructions for Glasseretskinke
To prepare the Glasseretskinke recipe, please follow these instructions:
The ham two days in a brine as above. It must not be too cold. Then in the oven-cooked quite slowly at 125 degrees, for frying thermometer 76 degrees. It is taken out, and the rind is removed. With meat or a disposable syringe provided the ham a good shot of brandy and madeira. The then lubricated with a mixture of egg whites, powdered sugar and breadcrumbs-about much of each, flavored with mustard powder. A handful of whole cloves blended in the ham, which again met in the oven. This time for full burner or under the grill until it is beautifully glazed-IE. 5-7 minutes. Keep a close eye on it under the grill, sugar can branke in an instant. The cooled completely before it cut out.
