To prepare the Chokolademuffins with Coconut-cream cheese-glaze recipe, please follow these instructions:
The cakes: heat the milk up.
Whisk the hot milk and cocoa together. Add buttermilk, oil, eggs, sugar, brown sugar and vanilla and beat well.
Sift flour, soda and salt into the batter and whip.
Got batter into muffin cups and bake them for 15 minutes at 180 degrees.
Glaze: Stir all the ingredients together and benefit a thick layer of icing on the cooled cakes. Sprinkle, if desired. give extra coconut on top of the glaze.

Tips:
The cakes will be extra delicious, if you instead of desiccated coconut using freshly grated coconut. It is a major work, but it is all worth the tear and wear! If you choose fresh coconut, use only ca. 150 g and drop the milk, as there is much moisture in the fresh coconut.
