200 | g | Dark chocolate |
5 | dl | Cream |
75 | g | Sugar |
9 | Pasteurized egg yolks |
Instructions for Chocolate mousse XI
To prepare the Chocolate mousse XI recipe, please follow these instructions:
Cut the chocolate into small pieces and put them in a bowl. Give the chocolate a water bath until it is completely melted - avoid touching it as it creates lumps. Whip egg and sugar into a white foamy mass while waiting for the chocolate to melt.
When the chocolate is melted, stir it together with the egg mass.
Whip the cream of foam and turn it into the chocolate and egg yolks.
Cover the mousse and put it in the refrigerator for at least 4 hours. Just overnight.
Serve it with fruit. It can be in the form of fresh fruit, canned fruit or fruit sorbet.

tips:
The darker the chocolate is, the faster the mousse becomes. However, it will not be as sweet when it's dark, so I personally prefer about 60%.
