To prepare the Chocolate mousse (VIII) recipe, please follow these instructions:
Beat the egg whites until stiff. Whip the cream stiff. Break the chocolate into pieces. Place it in a bowl and melt the chocolate over a water bath. Stir the egg yolks with sugar, orange peel. Pour the chocolate into little by little. Turn the whipped cream and egg whites into the chocolate. Pour dessert into a bowl or serving glasses and style the cold at least ½ hour. Garnish with whipped cream and grated chocolate.
