Instructions for Baguette 02
To prepare the Baguette 02 recipe, please follow these instructions:
Surdej: The yeast is rubbed in hand-held water. The flour is added and the dough is whipped with a fork until it is smooth and tender. Set to raise at normal room temp. For a day.
Dough: Add 2 dl of handful water to the sourdough with salt and the rest of the flour. Peel the dough so that it leaves table and hands.
Put the dough in a bowl and raise further for 4 hours.
Dough down and divide into 6 pieces rolled out to long baguettes, then place on a greased baking sheet and cover with a damp dish (giving a crisp crust). The breads adhere to for 45 min.
The bread is scratched with a sharp knife.
Bring the bread with a spiced egg with a couple of tablespoons. cold water.
The breads are put in a 260 degree (220-230 hot air) hot oven for 15 - 20 minutes. They should be removed just before they burn.
tips:
The breads can be used for all food where bread is to be served. The baguettes should preferably be eaten before 3 hours have elapsed. Otherwise they will be cool. The chilled bread can be stored in the freezer and lunes just before serving
